Gluten-Free Valentines Day Red Heart Cookies with Beet Juice

Ingredients:

- 1 cup gluten-free all-purpose flour

- 1/2 cup almond flour

- 1/2 teaspoon baking soda

- 1/4 teaspoon salt

- 1/2 cup unsalted butter, at room temperature

- 1/2 cup granulated sugar

- 1/4 cup PureClean beet juice

- 1 teaspoon vanilla extract

- 1/2 cup white chocolate chips

- 1/4 cup chopped pecans (optional)

Instructions:

1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a medium-sized bowl, whisk together the gluten-free all-purpose flour, almond flour, baking soda, and salt.

3. In a separate large bowl, cream together the unsalted butter and granulated sugar until light and fluffy. 4. Add the beet juice and vanilla extract to the butter mixture and mix until well combined.

5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.

6. Stir in the white chocolate chips and chopped pecans (if desired), distributing them evenly throughout the dough.

7. Shape the dough into tablespoon-sized balls and place onto the prepared baking sheet, spacing them about 2 inches apart.

8. Gently press down on each cookie with the back of a spoon to flatten slightly.

9. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.

10. Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes.

11. Transfer the cookies to a wire rack to cool completely before serving.
